This salsa is bursting with fresh flavor and is incredible on pork or chicken. I sometimes add a little extra lime juice if I think it is too sweet. This is a great natural condiment and way to add some fruit to your diet. Adjust the amount of jalapeno pepper to suit your taste. Try it and let me know how you used it.
NECTARINE OR PEACH SALSA
2 cups finely chopped peeled nectarine or peach (about 2 medium)
1/2 cup finely chopped red onion
2 tablespoons chopped cilantro
1 tablespoon fresh lime juice
1/2 teaspoon kosher salt
1/8 teaspoon ground red pepper
1 jalapeño pepper, seeded and finely chopped
1 garlic clove, minced
Combine in bowl and let sit for at least 30 minutes.
